Changing Icon Themes in Ubuntu: Intrepid Ibex
I been baffled by this since I started using Ubuntu (Dapper Drake).

Using gnome-art to get themes.
In the terminal type:

sudo aptitude install gnome-art

You can find the new menu in System>Preferences>Art Manager

From here, you can download and installing new icons themes.

The other alternative is to visit and check out and download those themes.

Once you have the file...
  1. System>Preferences>Appearance>Install
  2. Select the downloaded .tar file -
Everything should install without hiccup.

Implementing your new icon theme.
System>Preferences>Appearance - under the theme tab, select a theme that you want to change the icons for, then press Customize - navigate to the icons tab. Select your icon theme and viola!
